Gluten-Free Panzanella: The Easy Summer Bread Salad

A salad that actually keeps you full sounds too good to be true. So we put bread in it.

Panzanella is the Tuscan bread salad that turns a few ripe tomatoes and a good loaf into a meal. Traditionally it rescues day-old bread — but a gluten-free panzanella is even better, because our demi-baguette toasts up crisp on the outside while staying tender enough to drink in all that tomato juice and olive oil.

It comes together in about 25 minutes, gets better as it sits, and tastes like the height of summer. Here’s how to make it.

Ingredients

Serves 4 · 25 minutes · Gluten-free

  • 2 Gifted Breads Demi-Baguettes, torn into bite-size pieces
  • 3 tbsp olive oil, plus more for toasting
  • 1½ lb ripe mixed tomatoes, cut into chunks
  • 1 small cucumber, sliced
  • ½ red onion, thinly sliced
  • 1 cup basil leaves, torn
  • 2 tbsp red wine vinegar
  • 1 garlic clove, minced
  • Salt & black pepper

How to make gluten-free panzanella

  1. Heat the oven to 400°F. Toss the torn baguette with 2 tbsp olive oil and a pinch of salt. Toast on a sheet pan for 10–12 minutes, until golden and crisp at the edges.
  2. Whisk the vinegar, garlic, and remaining olive oil together and season with salt and pepper.
  3. In a large bowl, combine the tomatoes, cucumber, and onion with the dressing. Let sit 10 minutes so the tomatoes release their juices.
  4. Add the toasted bread and basil, toss, and let stand 5 minutes so the bread drinks up the dressing. Serve at room temperature.

Baker’s tip

The longer it sits, the better it gets — give the salad at least 15 minutes before serving so the bread soaks up the tomato juices and dressing without going soft.
