Hey there, lovely friends! With St. Patrick's Day just around the corner, it's time to celebrate with some traditional Irish fare. And what better way to honor the occasion than by baking your very own Irish Soda Bread? This simple yet delicious bread requires no yeast, no waiting for dough to rise, and minimal prep time. In fact, from start to finish, you can have a warm, freshly baked loaf in just about an hour – with only 30 minutes of actual hands-on work. So, let's dive into this foolproof recipe and get ready to savor the taste of Ireland!

Preparation Time: Before we jump into the kitchen, let's quickly go over the prep time. You'll need about 20 minutes to gather your ingredients and get everything ready. Once that's done, it's smooth sailing from there. 10 minutes to prepare the bread and +- 30/35 to bake the bread.

  • 100g rice flour
  • 100g teff flour
  • 60g tapioca flour
  • 30g dried milk powder
  • 1 tbsp cane sugar
  • 1 tsp bicarbonate of soda
  • 1 tsp gluten-free baking powder
  • 1 tsp salt
  • 1 tsp xanthan or guar gum
  • 1 medium egg (approximately 60g)
  • 220 ml buttermilk
  • Dried fruits (optional)
  • Extra gluten-free flour to dust the countertop

Making the Bread:

  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine all the dry ingredients (everything except the egg and buttermilk) and mix until well blended.
  3. In a separate bowl, whisk together the egg.
  4. Make a well in the center of the dry ingredients and pour in the egg mixture and the butter milk. Mix it with your hands until you have a lightly sticky dough.
  5. Transfer the dough onto a countertop dusted with gluten-free flour. Don't work on the dough too much, we want to place it inside the oven as fast as we can.
  6. Shape the dough into a ball or place it in a bread pan. If desired, add dried fruits for extra flavor.
  7. Score the dough with a cross on top if you've made a ball, or a straight line down the middle if using a bread pan.
  8. Bake at 425°F (220°C) for 5 minutes, then reduce the temperature to 330°F (165°C) and continue baking for approximately 25-30 minutes, or until the bread is golden brown and sounds hollow when tapped on the bottom.
