Gluten-Free Halloween Sandwiches (Jack-o’-Lantern Rolls)
Halloween parties are full of food you have learned to walk past: the cupcakes, the pizza, the sandwich platter that looks so good until you remember what it is made with. This year, you can put something on the table that everyone reaches for, and that you can enjoy without a second thought.
These gluten-free Halloween sandwiches are small, savory and a little mischievous. Soft Gifted Breads Dinner Rolls are carved with jack-o'-lantern faces, finished with a tiny pickle stem, and layered with salami, cheese, tomato and crisp lettuce. They need just a few ingredients and no special tools, and they work for a party, a school-night dinner or a movie night at home.
Why This Recipe Matters to Me
I was diagnosed with celiac disease more than 15 years ago. I was already an adult, old enough to understand what it meant and to find my way through it, but it still was not easy.
Now that I am a mom of two, I am always looking for the best food options for families whose children have been diagnosed with celiac disease or cannot tolerate gluten. Kids deserve food that is just as good as what everyone else is eating, so they can enjoy their childhood without the added burden of feeling different. Holidays like Halloween are when that matters most, which is why we love recipes everyone at the table can share.

Why Real Gluten-Free Bread Makes the Best Jack-o'-Lanterns
A carved sandwich only works if the bread holds its shape. Many gluten-free rolls crumble as soon as a knife goes in. Gifted Breads Dinner Rolls are made to taste and feel like real bakery bread. The crisp crust gives you clean edges for triangle eyes and a zigzag mouth, while the inside stays soft for biting.
Our breads are made in a Chicago facility that is 100% free from gluten, dairy, nuts, peanuts, soy and sesame. We test for gluten at stricter levels than GFCO requires. Gifted Breads is GFCO Certified Gluten-Free, Kosher certified by cRc, and a Certified B Corporation. Please note that Gifted Breads Dinner Rolls contain egg.
Gluten-free never tasted so good!
Halloween Sandwiches: Spooky, Savory, Delicious
Cute, mini gluten-free dinner rolls made with our soft and flavorful bread, perfect for your Halloween spread.
Makes: 4 sandwiches
Ingredients
- 4 small gluten-free dinner rolls (we use Gifted Breads Dinner Rolls)
- 1/2 cup Dijon mustard or grainy mustard
- 8–12 slices salami or pepperoni
- 4 slices mozzarella or provolone cheese
- 4 lettuce leaves (e.g., romaine or butter lettuce)
- 4 tomato slices
- 4 small pickles or cornichons (for stems)
- Optional: black olives (for eyes)
Instructions
- Cut the rolls: Slice each dinner roll horizontally. With a small sharp knife, carve a jack-o'-lantern face into the top half of each roll (triangle eyes and a zigzag mouth).
- Prepare the "stem": Cut a small piece of pickle or cornichon and insert it into the top of each roll.
- Spread mustard: On the bottom half of each roll, spread a layer of Dijon or grainy mustard.
- Layer the fillings: Add salami or pepperoni, a slice of mozzarella, tomato, and lettuce.
- Top it off: Place the carved top bun on each sandwich.
- (Optional) Add olive eyes: For an extra spooky touch, use sliced black olives for eyes, or leave the carved face as is.
Tips for Perfect Jack-o'-Lantern Sandwiches
Carving
- Use a small paring knife with a sharp tip, and make short, shallow cuts instead of sawing.
- Keep the faces simple. Two triangles and a zigzag read clearly on a small roll.
- Carve on a cutting board with the top half cut-side down so the roll sits steady.
Making Ahead
- Carve the tops, slice the tomatoes, wash and dry the lettuce, and cut the pickle stems ahead of time. Keep everything covered and chilled.
- Assemble shortly before serving so the bread stays at its best.
Making Them for a Party
- One bag of Gifted Breads Dinner Rolls holds 12 rolls, enough for three batches of this recipe (12 sandwiches).
- For 12 sandwiches, multiply each ingredient by three.
- Set up an assembly line (carved tops, mustard, meat, cheese, tomato, lettuce) to fill the platter quickly.
Gluten-Free Label Checks
- The bread is gluten-free. Check everything else. Choose salami or pepperoni, mustard, pickles and cheese clearly labeled gluten-free.
- Mustard: Some mustards use beer or malt-based ingredients. Read the label.
- Pickles: Avoid pickles made with malt vinegar, which comes from barley.
- Deli meats: Some cured meats contain fillers or flavorings with gluten. Look for a gluten-free label.
- Dairy: Mozzarella and provolone contain dairy. For a dairy-free version, use a dairy-free cheese slice and check its label.
- Avoid cross-contact: Use a clean board, knife and fresh spreads that have not touched regular bread, and serve these sandwiches on their own platter.
- Labels vary by country: US (FDA) and EU/UK gluten-free labeling rules differ, so read labels carefully on imported products.
