GF Carrot Ginger Soup + Demi-Baguette: A Match Made in Heaven
Gluten-Free Baguette + Soup, the fall wonderland!
Yesterday, the weather turned a bit chilly here in Chicago, and across the pond in London as well, so I officially declared it SOUP season! (And yes, I do consider cheese fondue a sort of soup—but more on that later!) With the colder weather, I decided to whip up one of my family’s favorites: Ginger Carrot Soup, and naturally, the perfect pairing was our very own Gifted Breads Demi-Baguette. 🥖🍲
A little backstory: Last year, my entire family relocated to London for my husband’s job. Despite the move, my love for Gifted Breads was just too strong to let go, so I decided to keep actively running the business from there. But that’s a story for another time...
During our first Easter in London, my then-3-year-old toddler became absolutely obsessed with Peter Rabbit. Instead of giving him too much chocolate (although, who can really say what too much is?), we gave him a Peter Rabbit costume. It instantly became his Monday uniform—he could feel it was Monday even though he didn’t really know what that meant! 🐰
Since then, every time we go to the grocery store, we have to buy carrots for Peter Rabbit. The funny part? My little one doesn’t even like carrots—no matter how they’re served! So, I often find myself with an abundance of carrots in the fridge. That’s when I discovered this amazing Carrot Ginger Soup recipe from @loveandlemons, and it has quickly become a family favorite.
The soup is a delightful blend of fresh carrots, ginger, garlic, and onion, simmered in vegetable broth and blended until smooth. The result is a creamy, flavorful soup with a hint of spice, perfect for chilly days. For an extra touch, I love to drizzle a little coconut milk and sprinkle fresh herbs on top. 🌿
And of course, the perfect pairing? Our Gifted Breads Demi-Baguette. There’s just something about dipping a warm, crispy baguette into a rich, velvety soup that makes the meal complete. 🥖✨

Carrot Soup Recipe with Ginger
Ingredients
- 1 tablespoon extra-virgin olive oil
- ½ medium yellow onion, chopped
- ½ teaspoon sea salt
- 3 garlic cloves, smashed
- 1 pound carrots, roughly chopped
- 1 teaspoon grated fresh ginger
- 1 tablespoon apple cider vinegar
- 3 cups vegetable broth
- Freshly ground black pepper
- 1 teaspoon maple syrup, optional
- Coconut milk, for garnish, optional
Instructions

Heat the oil in a large pot over medium heat. Add the onions, salt and pepper and cook until softened, stirring occasionally, about 8 minutes. Add the smashed garlic cloves (they’ll get blended later) and carrots to the pot and cook 8 minutes more, stirring occasionally.

Stir in the ginger, apple cider vinegar, and broth. Bring to a boil, then reduce the heat and simmer for 30 minutes.

Let cool slightly and transfer to a blender. Blend until smooth. If your soup is too thick, add a little water. If you would like your soup a little sweeter, add the maple syrup.

Serve with a drizzle of coconut milk, if desired.
