Gluten-Free Harvest Crostini: Sage, Brown Butter, and a Little Honey
The appetizer everyone reaches for twice, and nobody remembers is gluten-free.
Some appetizers are built to be a first course. This one's built to disappear before anyone sits down. This gluten-free crostini starts with toasted Gifted Breads Demi-Baguette, gets a layer of whipped ricotta, and finishes with sage leaves crisped in brown butter and a drizzle of honey — the kind of small bite that makes a harvest table feel finished.
It comes together in about 20 minutes and travels well if you're headed to someone else's table.
Ingredients
Serves 6 (appetizer portions) · 20 minutes · Gluten-free
- 1 Gifted Breads Demi-Baguette (or Large Baguette), sliced into ½-inch rounds
- 4 tbsp butter
- 10–12 fresh sage leaves
- ½ cup ricotta or soft goat cheese
- 2 tbsp honey
- 2 tbsp toasted pumpkin seeds
- Flaky salt
How to make gluten-free harvest sage brown butter crostini
- Toast the Demi-Baguette slices at 375°F for about 8 minutes, until golden.
- Melt the butter in a skillet over medium heat. Add the sage leaves and cook until the butter turns golden-brown and smells nutty, 3–4 minutes. Lift the sage leaves out and set aside; keep the browned butter in the pan.
- Spread each toasted slice with ricotta or goat cheese.
- Drizzle with the brown butter, top with a crisped sage leaf and a scatter of pumpkin seeds, then finish with a drizzle of honey.
- Add a pinch of flaky salt and serve right away, while the crostini are still warm.
Baker's tip
Watch the butter closely once it starts to foam — the difference between "brown butter" and "burnt butter" is about 30 seconds. Pull it the moment it smells nutty and turns the color of light caramel.
