Gluten-Free Whipped Ricotta & Cucumber Tartines

These gluten-free whipped ricotta tartines are the easy summer lunch you’ll come back to all season. Whip ricotta until it’s light and lemony, toast slices of Gifted Breads demi-baguette, and pile on cool cucumber and fresh dill. That’s it — ten minutes, no real cooking, all flavor.

Ingredients
Serves 4 · 10 minutes · No cooking · Gluten-free
- 2 Gifted Breads Demi-Baguettes, sliced on the bias
- 1 cup whole-milk ricotta
- 1 lemon, zested and juiced
- 2 tbsp olive oil, plus more to finish
- ½ English cucumber, thinly sliced
- 2 tbsp fresh dill, chopped
- Flaky salt & black pepper
How to make whipped ricotta tartines
- Whip the ricotta with the lemon zest, half the juice, 1 tbsp olive oil, and a pinch of salt until smooth and airy. A fork works; a food processor works better.
- Toast the baguette slices until just golden at the edges.
- Spread the whipped ricotta thickly over each slice.
- Top with cucumber and dill, then finish with a squeeze of lemon, a drizzle of olive oil, and a pinch of flaky salt.
Baker’s tip
Whip the ricotta a day ahead and keep it chilled — it only gets silkier, and assembly takes two minutes when you’re ready to eat.
