Gluten-Free Whipped Ricotta & Cucumber Tartines

Gluten-Free Whipped Ricotta & Cucumber Tartines

“Too hot to cook” is usually bad news for dinner. Not tonight.

These gluten-free whipped ricotta tartines are the easy summer lunch you’ll come back to all season. Whip ricotta until it’s light and lemony, toast slices of Gifted Breads demi-baguette, and pile on cool cucumber and fresh dill. That’s it — ten minutes, no real cooking, all flavor.

It’s open-faced, it’s pretty, and it works as a light lunch, a snack, or a simple appetizer for guests. Here’s how to put it together.

Ingredients

Serves 4 · 10 minutes · No cooking · Gluten-free

  • 2 Gifted Breads Demi-Baguettes, sliced on the bias
  • 1 cup whole-milk ricotta
  • 1 lemon, zested and juiced
  • 2 tbsp olive oil, plus more to finish
  • ½ English cucumber, thinly sliced
  • 2 tbsp fresh dill, chopped
  • Flaky salt & black pepper

How to make whipped ricotta tartines

  1. Whip the ricotta with the lemon zest, half the juice, 1 tbsp olive oil, and a pinch of salt until smooth and airy. A fork works; a food processor works better.
  2. Toast the baguette slices until just golden at the edges.
  3. Spread the whipped ricotta thickly over each slice.
  4. Top with cucumber and dill, then finish with a squeeze of lemon, a drizzle of olive oil, and a pinch of flaky salt.

Baker’s tip

Whip the ricotta a day ahead and keep it chilled — it only gets silkier, and assembly takes two minutes when you’re ready to eat.
